Super Fluffy Whole Wheat Flap Jack with Fruit

The first thing that yer gonna' wanna' do is to make up some pancake mix from Grandpa's recipe. The ingredients are for the short recipe but Grandpa likes to, at least, quadruple the batch to keep some mix on hand. You ain't gonna' find no store bought pancake mix at Grandpa Wilbur's house unless Grandma brought it home. Then as soon as Grandma ain't lookin' Grandpa throws it to the sputzies out back. Anyway...

Measure and mix:
One and one-quarter cup of quality whole wheat flour
Two tbsp ground flaxseed
One tsp of baking soda
Two tsp of Baking powder
1/4 tsp of salt

***Remember Though***
It's best to quadruple these ingredients because you're gonna' love these fluffy jacks enough to make more for the next day. Store the mix in an airtight container. (For those of you that ain't gone past the 3rd grade, quadruple means X4 on your multiplication tables.)

Spray a cast iron fryin' pan with cooking spray and heat it to just a butt scratch over medium hot. The spray will start to spread away from center when it's hot enough to cook your jack.

To make the batter:
Crack one egg or two egg whites into a bowl and whip it.
Measure one cup of non-fat cold milk and whip into eggs.
Add one heaped cup of Grandpa Wilbur's Fluffy Homemade Flap Jack Mix. and stir until there ain't no lumps.
Pour a healthy helpin' of batter into the hot pan and start salivating while you warm your favorite syrup in the microwave.
When the edges of the jack start to dry then you can flip it. Let it cook for another 3 minutes or so and then slap that jack on a plate.
Line the plate with your favorite fruit that you have on hand. Pour on some hot syrup and go to it.
Grandma just loves these with fresh blueberries when they're in season. Ya' gotta' be careful, though, or them little blue buggers will roll off the plate and then the dog will be happier than you are
